INGREDIENTS FOR THE CHICKEN

  • 1/2 cup extra-virgin olive oil
  • 3 cloves garlic, minced. 
  • Juice of 1 lemon 
  • kosher salt 2 tsp. 
  • ground coriander 1 tsp. 
  • ground cumin 1 tsp. 
  • freshly ground black pepper 1/2 tsp. 
  • 1/4 tsp ground cinnamon. 
  • 1/4 tsp cayenne pepper.
  • ground turmeric 1/2 tsp. 
  • 2 lb. boneless skinless chicken thighs
  • Cooking spray
  • 1 large onion, thinly sliced

INGREDIENTS FOR YOGURT SAUCE

  • 1/2 cup Greek yogurt 
  • Juice of 1/2 lemon. 
  • extra-virgin olive oil 1 tbsp
  • Kosher salt according to taste
  • 2 cloves garlic, smashed and minced
  • Pinch of crushed red pepper flakes

INGREDIENTS FOR SERVING

  • Pitas, warmed
  • Cherry tomatoes, halved
  • Chopped romaine 
  • Cucumber, thinly sliced

DIRECTIONS

  1. Make chicken: Whisk together the oil, lemon juice, garlic, and seasonings in a large mixing bowl. Throw chicken in mixture to marinate. Refrigerate for at least 2 hours and up to overnight.
  2. Preheat the oven to 425 degrees and coat a large baking sheet with cooking spray. Throw the onion in the marinade to coat it. Remove the chicken and onion from the marinade and place them on the baking sheet that has been prepared. Bake for 30 minutes, or until the chicken is brown and cooked through. Allow 5 minutes for the chicken to rest on the cutting board before slicing thinly.
  3. Meanwhile, make yogurt sauce: Mix together yoghurt, lemon juice, oil, and garlic in a mixing bowl. Season with a touch of red pepper flakes and a pinch of salt.
